(makes 2 servings) Chia pudding 1/4 cup chia seeds 1 cup oat milk 1 tsp maple syrup 1 tsp vanilla extract Place all the ingredients in a jar and mix well. Mix few more times in the first 10 minutes to avoid lumps. Place in the fridge and let soak for one hour. Matcha lime nice cream 3 frozen bananas 1 tsp matcha powder juice of one lime Place all the ingredients in a food processor and blend until smooth and creamy. Enjoy!

And tasted a bit like tiramisù cake I highly recommend taking those extra 5 minutes to prepare your oats before going to bed, it makes all the difference on a day like this The recipe is super easy, I'll leave it here below: . Overnight oats 1/2 cup oats (choose between old fashioned and porridge oats) 1 tbsp chia seeds 1 tbsp maple or agave syrup pinch of sea salt 3/4 cup plant milk of choice Mix everything in a jar and let sit in the fridge overnight. In the morning give it a stir and transfer to a serving cup, on top of a layer of crushed cookies (I used biscoff). Whipped coffee (dalgona) 1 tbsp instant coffee 1 tbsp raw cane or coconut sugar 1 tbsp hot water Whip all ingredients with an electric whisk, until stiff and foamy. Transfer on top of the oats and serve!

I had it for breakfast this morning and it was so good It's basically cooked porridge topped with chocolate and left in the fridge overnight, but it feels like eating the most fancy dessert for breakfast If you have a small cake pan with removable bottom and 10 minutes of free time, you can make one and enjoy it for breakfast tomorrow I'll share the details below! . Vanilla porridge cake with almond butter chocolate ganache (1 serving) 1/2 cup of fine porridge oats 1/2 cup of water 1/2 cup of plant milk of choice 2 tsp of maple syrup or honey Pinch of sea salt 1 tsp of vanilla 15-20g of dark chocolate 2 tsp of almond butter Add oats, water, plant milk, sweetener, vanilla and salt to a saucepan. Bring to a boil and cook for 3 minutes or until thick, whisking frequently. Set aside to cool for 15 minutes. Place a small (8-10cm) bottomless cake pan on a plate. Transfer thick porridge into the pan and even the surface with a spoon. Place in the fridge while you prepare the ganache. Add dark chocolate and almond butter to a small bowl and melt it in hot water bath or in microwave. Mix to combine. Pour the ganache over the porridge. Refrigerate overnight (or minimum 4 hours). To serve, run a knife around the edges and remove the pan. Add toppings of choice and enjoy!
