– 1/2 cup dairy free yogurt
– 1 tsp vanilla extract
Filling:
– 1/2 cup brown sugar
– 2 tbsp cinnamon, divided
– 2 apples of choice, chopped
Instructions:
Preheat the oven to 350F. Grease and line an 8×8” baking pan with parchment paper; set aside.
Start by preparing the crumb topping. Mix together all of the ingredients in a medium bowl with a fork, until well combined and crumbly. Cover and place into the fridge until ready to use.
Make cake batter. In a small bowl, whisk together the almondmilk and apple cider vinegar. Set aside and let sit for a few minutes.
In a medium bowl, whisk together the flour, baking powder, spices, and cinnamon. Set aside.
Add the melted butter, yogurt, and vanilla extract to the almondmilk/ACV mixture. Whisk to combine.
