The extraordinary Sublimotion, which opened to instant renown in an exclusive space in Ibiza in 2014, is the brainchild of Paco Roncero, chef and owner of two-Michelin-starred Paco Roncero Restaurante in Madrid, accompanied by co-founder and creative director Eduardo Gonzales of Vega Factory.
 
The show includes 360-degree screens to stimulate diners’ senses with imagery projected onto every surface, from the walls to the table. It’s a spectacular hi-tech show around a fantastic epicurean encounter that quite literally turns the dining room into a stage, the staff into actors and the lucky diners into stars.
 
Dress code: Smart elegant or national attire. We respectfully ask guests to refrain from wearing sportswear, beachwear, torn jeans and flip flops. Long pants are required.

True to the culinary aspirations of Mandarin Oriental Jumeira, Dubai and guest chef Paco Roncero, famed for his two-Michelin-starred restaurant, the dining itself is at the very heart of the magical Sublimotion.
 
However, with mystery and surprise as essential ingredients, the Sublimotion cuisine and menu are closely guarded secrets. This is because the performance and presentation of the fare are key to the dining experience.
 
“The truth is that one of our dreams was always to be able to turn the table into a stage. And today, at Sublimotion, the table is a stage where many things happen on it and around it. Quite simply, we have made a change to the way we eat,” says Chef Paco.
 
Diners will find themselves in and surrounded by wonderful themes and scenes that complement where the dishes come from, how they are made, what they represent and why they are so delightful to taste and eat. The electric atmosphere is a celebration of the joy of eating and drinking.
 
When guests make their reservation, they are, of course, asked if they have any allergies or sensitivities and their menu is adapted accordingly.
 
There are usually around 10 courses for diners to experience, with each delicacy introduced by the master of ceremonies, performers, or the compelling sense and drama of the surrounding scene unfolding.
 
The cuisine and its presentation could be described as international. Some would say out of this world. Let’s leave it for the lucky diners to decide.

Leaving aside the fact that there are at least 25 people involved in a Sublimotion performance and the presentation of its food to the 12 diners present, there’s an impressive amount of high-tech activity in the background and foreground.
 
The team consists of brilliant designers, engineers, stage directors, composers, illusionists, and actors, and is led by co-founder Founder and Creative Director Eduardo Gonzales. In 2000 Gonzales opened his own event agency, Vega Factory, in charge of the conception, production and development of Sublimotion.
 
His more than twenty years of experience in the creation of great events and shows, together with his creativity and passion for the performing arts, have allowed the development and evolution of this new dining experience. With extensive training in design and communication, Eduardo sketches in pencil each of the scenes that make up this show, thus creating, an emotional timeline that will later be able to transport the diner to the different dreamed scenarios.
 
His knowledge of the latest technologies applied to the immersive experience has made the Sublimotion concept evolve to what it is today. Eduardo offers us, with this performance, a look into the future that allows us to visualize what a dinner with friends will be like in the year 2050.

The experience focuses on Chef Paco’s take on fantastic molecular gastronomy, served at a large 12-seat dining table. The table and dining room (“the capsule”) magically transform throughout the dinner so that each course immerses the guest in a different sensation or environment. The Sublimotion state-of-the-art system includes 360-degree screens of over seven million pixels and fifty thousand lumens. It creates a vivid setting to stimulate diners’ senses, ensuring the experience goes way beyond that of a normal restaurant, from controlling the temperature and scents to arranging a musical ambience fit for the occasion. Every surface, from the walls to the table, can be projected onto.
 
Thanks to the great working team, diners will be immersed in an unforgettable hybrid culinary experience. The real and the virtual are combined to achieve one of the most extraordinary moments that can be enjoyed around a table.
