Curry turmeric cauliflower with ginger & raisins

Ingredients: 1 large head cauliflower, cut into bite size florets 1 tbsp avocado oil 1 inch piece of ginger, peeled and grated on microplane 1 clove garlic, minced Zest of 1 lemon 2 tsp curry powder 1 tsp turmeric Salt and pepper to taste 1/3 cup golden raisins (optional: soak raisins in hot water while cauliflower cooks to make them more plump and softer) 2-3 tbsp fresh parsley, chopped . Instructions: Preheat oven to 400 degrees F. Place cauliflower florets on large baking sheet. Drizzle with olive oil, and toss with ginger, garlic, lemon zest, curry powder, turmeric, salt and pepper. Roast for 25-35 minutes until fork tender and nicely browned. In a large bowl, toss cauliflower with raisins and parsley. Serve warm or at room temperature.

Refreshing Blackberry Mojito Mocktail

1/2 cup fresh blackberries, 1/4 cup fresh mint leaves, 1 1/2 tsp granulated cane sugar, Juice of 1 lime, divided in half, 2–3 cups ice, 16 oz club soda. Wash and dry the blackberries and mint. Add the blackberries, mint, and sugar to a small bowl. Use a muddling tool to muddle the blackberries, mint and sugar. Press firmly down with the muddler and twist it back and forth. Continue until the mint is fragrant and the blackberries resemble jam. Spoon an equal amount of the muddled mixture into two 16 ounce drinking glasses. Add an equal amount of lime juice to each glass. Fill each cup with ice, almost to the top. Pour club soda into each glass. Use a spoon to mix the mocktails up, so the berry and mint mixture is well dispersed. Garnish with sprigs of mint or lime slices, and serve with a drinking straw.
