High quality Yam powder
Cooking creamy milk
Canola oil
Vegetable oil
Bread crumbs
Sweet red bell peppers diced
Onions diced
Garlic diced
spring onions diced
Parmesan cheese shredded
Mexican chilli powder
Paprika
Curry powder
2 eggs
2 Chicken or beef stock cubes
parsley flakes
How to
Makes 7
Mix 2 cups of yam powder with some milk and three to four table spoons of bread crumbs
Add some water to get the right texture it should be quite stiff not runny be really careful
Separate the yoke from the white
Add the yokes to the yam powder mixture
Add the bell pepper, onions, garlic, spring onions and the spices and about two to three spoons of parmesan cheese.
Whisk the white of the egg and leave in a separate bowl
Place some bread crumbs in another bowl
Create a meat ball like shape or the oval shape shown below with the yam powder mixture
Dip each yam ball in the white wash mix and then dip in the bread crumb bowl and set aside
Heat your canola and vegetable oil up
Fry for about 4-5 minutes per side
Use a kitchen towel to drain the excess oil after frying
Sprinkle with parsley flakes
You can serve this with bolognese sauce it’s Delish!
