Ours are flash-frozen right on the boat, retaining as much saline freshness and juicy texture as possible in an extremely practical and easy to use format. Laid over a slice of rye bread with whipped crème fraîche, trout roe, chives, and lemon zest, this simple dish is a wonderful introduction to an underrated crab.

Hamachi Sushi Bomb with fresh Japanese Wasabi & Siberian Sturgeon Caviar

Crown Toro Hamachi is an exquisite, sustainably sea-farmed fish from Uwajima, Japan. With a naturally smooth, buttery texture and delicate flavor, it’s prized for all sushi and sashimi applications. Here, the loin of the fish is garnished with top-notch wasabi and a dollop of Baerii caviar.

This pasta, with nothing but a simple butter sauce, binds beautifully with the truffles, transforming it into an explosively aromatic and occasion-worthy meal.

Next Level Steak Frites: A5 Miyazaki Ribeye with Golden Osetra, Maine Bafun Uni, and Shoestring Potatoes

There are few things we love more than epic renditions of classic dishes, and anything with A5 Japanese Wagyu as its centerpiece guarantees to deliver. Differences in historical breeding practices, climate, diet, and farming techniques allow different prefectures’ Wagyu to evoke their terroir as assertively as wine does its appellation. In all cases, it is downright spectacular—sweet, complex, and as satiating for the spirit as the stomach. The cows in the Miyazaki prefecture, mostly fed wheat and corn, have an especially vibrant color, soft texture, and density of flavor. Combined with crispy shoestring potatoes, the supple steak is especially luxurious, and while other variations on this dish may contain various condiments, ours gets its additional pops of brightness and texture from the brisk duo of caviar and Uni.
