Wintery fruit punch porridge, to celebrate the first major snowfall.
The recipe is down below. You can use a homemade fruit punch, fruit tea with berries, or your favorite flavored water.

Fruit Punch Porridge (2 servings)
1 cup soy milk
1 cup fruit punch
1 cup spelt flakes
1/4 cup quinoa flakes
1/4 cup freeze-dried cherries
(alternatively 1/2 cup frozen cherries)
1 tsp beet powder
1 tsp dried heather

Bring soy milk & fruit punch to the boil. Add all other ingredients and cook on low heat for a few minutes, until creamy. Stir constantly. Sweeten to taste & layer in a jar with plant-based yogurt & red berries. Enjoy!

Wintry rose-infused coconut porridge.

Rose-infused Winter Porridge
1/2 cup fine oatmeal
1/4 cup quinoa flakes
1/4 cup coconut flakes
1/2 tsp ground rose petals
300 ml soy milk
a splash of maple syrup
1/2 tbsp pink pitaya powder
1 tsp beet powder
1/2 cup blackberries

Bring soy milk to the boil. Add oatmeal, quinoa flakes, coconut flakes, and ground rose petals and cook on low heat until creamy, stirring constantly. Add fruit powders, maple syrup & blackberries. Layer in a jar with raspberries and coconut yogurt. Enjoy!
